It starts in 1994 — in a family pizzeria in Naples, thick with the smell of fire and dough and the sound of Andrea Di Vaio’s father working the counter alongside his brothers. That kitchen was Andrea’s first classroom. Long before culinary school, long before Sydney, before the awards and the accolades, there was a small boy watching his father’s hands shape dough the way his father’s father had shaped it before him.

Pizza, in Andrea’s family, was never just food. It was how they spoke to each other. Every flavour told a story — the aromas, the colours, the heat of the Vesuvian fire. You didn’t just eat a Neapolitan pizza. You felt where it came from.

OUR STORY

“Our family pizzeria started in 1994, born from the passion of my father and his brothers. Every flavor tells the story of Naples — the aromas, the colors, and the passion we still bring to Neutral Bay.”

When Andrea brought his family to Sydney, he brought the pizzeria with him. Not the building — the spirit of it. The standard his father set. The refusal to compromise on ingredients, on method, on the invisible things that separate a good pizza from an unforgettable one.

250 Pizza Lab opened in Neutral Bay with one simple intention: to make you feel, just for a moment, like you’re sitting somewhere in Naples. To give Sydney something it didn’t quite have — a Neapolitan pizza made exactly the way it should be, by someone who has been making it his whole life.

Our Experience

Over the next two decades, Andrea poured himself into the craft, working at some of the top restaurants in Sydney, Watsons Bay Hotel, transforming their pizza offering to one of the best in the city. Twenty-two years of making, refining, failing, and perfecting — learning what happens to a dough when the humidity changes, when the flour is slightly different, when the fire runs a degree too cool. This is not the kind of knowledge you find in a recipe book. It lives in the hands.
